This is a recipe that my aunt Marie gave me when I was newly married. It is easy and very tasty. A great success with children (even fussy ones). It can be made with either pork or chicken pieces, preferably chicken thighs.
500 g pork (preferably fillet) or chicken
2 tbsp butter
Salt & pepper
1 cup chicken stock
1 green pepper and 1 small onion
3 tbsp pineapple pieces
¼ cup sugar
¼ cup vinegar
3 tbsp flour
2 tsp Soy sauce
3 tbsp pineapple juice
Melt butter. Fry cubed pork (or chicken) until browned. Season and add stock. Cover and simmer for 25 min.
Slice onion and pepper.
Mix together sugar, flour, vinegar, Soy sauce & pineapple juice.
Add to meat with pepper, onion & pineapple pieces.
Cover and simmer for a further 10-15 min. Do not overcook after adding the last ingredients as you want them to be crispy.
Serve with rice.
